Paula Deen's Three Cheese Hot Artichoke Dip

This is the best dip ever!!! I went to my niece's shower and this dip was there. I actually thought it was a casserole so I got me a huge scoop and thought it was the best casserole I had ever had. Turns out, it was artichoke dip. They had two pans on each ends of the table so I didn't see the little sign saying it was dip. :s I got me 2 helpings!! I just couldn't help myself...it was that good!!!


Three Cheese Hot Artichoke Dip

Ingredients
1 (8 ounces) block cream cheese, softened
1 cup mayonnaise
1 (14 ounces) can artichoke hearts, drained and chopped
2 green onions, sliced thin
1/2 cup grated Parmesan
1 cup shredded mozzarella
Dash hot sauce
Dash Worcestershire sauce
Salt and pepper

Directions
Preheat oven to 350 degrees F.
In a large mixing bowl, beat the cream cheese with a hand held electric mixer until smooth. Then beat in the mayonnaise until smooth. Add remaining ingredients and stir together until combined. Transfer the dip to a pie plate or shallow gratin dish. Bake in a preheated oven for 30 to 40 minutes until the top is golden brown and the dip is bubbling. Serve hot with crackers, tortilla chips, crostini or veggies.

Chicken Rice Casserole

I am cooking for a friend of mine who is in my Bunco group tonight. I decided I needed to make something quick, easy, and also something that transports fairly easily in the car. I decided to make her Chicken Rice Casserole. Macy's grandmother gave me this recipe years ago and I still make it because it's so easy and it tastes great! Here's the recipe:

2 small cans chicken, drained (I use Swanson white chicken)
2 cans chicken broth
1 can french onion soup
2 smalls cans mushrooms, drained
2 cups raw uncooked rice
1 can peas
1 Tbs. onion flakes
Dash Tabasco sauce
1 Tbs. Worcestershire sauce
1/4 cup Parmesan cheese
1/4 tsp. garlic salt
2 sticks melted butter
1/2 cup slivered almonds
Put all ingredients in bowl and mix together.
Bake uncovered in 9x13 inch pan for 1 hour at 350 degrees.
I don't put the peas in because my husband doesn't like them. I also don't put the Tabasco sauce in because on my recipe card, it's written on the same line as the onion flakes, so I've always overlooked it. I did see it today and put a dash in there. :) Oh, also I just pour chicken broth in the french onion soup can after I pour that in because the chicken broth cans they sell now are bigger than the Campbell's can and using those bigger cans would make the casserole too watery. Macy and Lamar both LOVE this meal and so do I because it's the easiest casserole to make ever!!!

Rolo Brownie Bites

Okay, so these are pretty much the yummiest brownie bites you will EVER eat!!! My cousin, Catie, made them for a Super Bowl party a few years ago and I could not quit eating them!!! They are super easy!!!

Ingredients
Brownie Mix (you will need vegetable oil and eggs for the brownies)
Rolos
Little muffin pans (I buy the disposable pans that come with muffin liners already in them...you can buy them at Kroger).

Follow the directions on the brownie mix. After you have mixed the batter, put 1/2 tbs of brownie mix in one of the muffin liners, followed by a Rolo, followed by another 1/2 tbs of brownie mix. Bake at 350 degreees for 18 minutes. ENJOY!!!

Rosie Love loves to make these with me. We make them all the time. I always keep the ingredients in my kitchen just in case she comes over (or I run out). :) Her favorite part is putting the Rolos in the middle and licking the bowl when we're through.

Salad with yummy dressing!

Believe it or not, I had never made a salad until February. I never liked salad until I was almost 30 and now I love them. I had a wonderful salad at a Bible study luncheon a couple of months ago and just had to get the recipe to make for my Bunco group. Here it is:
DRESSING
1 cup vegetable oil
1/3 cup red wine vinegar
1/2 cup sugar
1 tsp prepared mustard
2 T lemon juice
2 T poppy seeds

SALAD
Mixed baby greens (about 8 cups)
Granny Smith apples cubed
1 cup Swiss cheese grated
1 cup cashews

I eat this salad all the time now. I half the recipe and put the dressing in a little container. I buy organic baby mixed greens at the store. All I have to do when I want this salad is put a little bit of greens on a plate, add cashews and swiss cheese and voila....yummy salad! I don't put much dressing on, either, so there aren't very many calories and the nuts and cheese give me protein so I'm good to go. I'm out of dressing so I'm going to go make some now where I can have a salad for dinner. I ate WAY too much for lunch at Trio's today! :s

White Chicken Chili

This white chicken chili is SO good!!! Lamar loves it!!! I found the recipe on the Internet when I was wanting to make a good chicken chili recipe....I just searched for the recipes with the best ingredients and it worked....so delicious!!!

1 lb. boneless skinless chicken breast cut up
1 medium onion
1 1/2 tsp. garlic powder
1 T vegetable oil
2 15 1/2 ounce northern white beans, rinsed and drained
1 14 1/2 ounce can chicken broth
1 tsp salt
1 tsp oregano
1/2 tsp pepper
1/4 tsp cayenne pepper
1 cup sour cream
1/2 cup whipping cream
2 4 ounce cans diced green chilis

In large saucepan, saute chicken, onion, and garlic powder in oil until chicken is no longer pink. Add beans, chilis, chicken broth, and seasonings. Bring to a boil. Reduce heat and simmer for 30 minutes uncovered. Remove from heat, stir in sour cream and whipping cream. Serve immediately.

I always do things a little bit different than the recipe because the bottom line for me is this....I will not cook if it is not easy..... so I just make things easier for me. Instead of cooking chicken breasts, I buy the little chicken already cooked at Kroger... it is a lot cheaper than the chicken breasts and tastes great. I also don't ever cup up onions...for one thing they make my eyes burn and water like crazy and they also make my hands smell. I just buy the frozen chopped onions.....so easy and still tastes great. I also always buy the mild diced green chilis. This recipe is spicy even with the mild chilis. I can't imagine how spicy it would be with regular or hot chilis.

This is the chicken that I buy. I usually buy one but these looked a little small so I bought two this time and used 1 1/2.

I also don't cook the chili how the recipe says...I just put everything into a saucepan (including the whipping cream and sour cream) and stir continously (while I'm stirring my husband is cutting up the chicken for me). It's SO easy and by far the best white chicken chili I have ever tasted.

Coca-Cola Cake

YUM!!! I LOVE this cake!!! It is so delicious....everyone always loves it and requests it. I had tasted Coca-Cola cake when I was younger and remembered how much I loved it. I searched the Internet years ago and found this recipe on a Super Bowl webpage. :)

Cake
2 cups plain flour
2 cups sugar
2 sticks butter
3 T. cocoa
1 cup Coca-Cola
1/2 cup buttermilk
2 eggs
1 tsp. vanilla
1 tsp. baking soda
1 1/2 cup mini marshmallows

Icing
1 stick butter
3 T cocoa
6 T Coca-Cola
1 box powdered sugar (or 1/2 of a bag)
1 tsp. vanilla

For cake: Combine sugar and flour in mixing bowl. Heat butter, Coca-Cola, cocoa to boiling and pour over flour and sugar mixture mixing thourougly. Add buttermilk, eggs, baking soda, vanilla, and marshmallows. Mix well. The batter will be think and the marshmallows will float on the top. Bake is a greased 9x13 inch pan at 350 degrees for 30-35 minutes.

I actually just melt the butter in the microwave and then mix everything together and it still tastes great. The last few times I have made this cake, I have also added marshmallow cream to the cake after it is done instead of adding marshmallows. The marshmallows tend to burn a little so I have found that the marshmallow cream is even better.

For icing: Combine butter, Coca-Cola, and heat to boiling. Pour over sugar. After beating, add vanilla. Spread over hot cake.

I melt the stick of butter in the microwave and then add all the other ingredients and mix well. Viola! I also add this icing to brownies and it is delicious! I buy any kind of brownie mix and cook in a 9x13 inch pan for 24 minutes...then ice...DELICIOUS!!!!
